Humans can bash them back and let the ogre occupy their mummies. Otherwise, you can force them to score fast and outscore them. If they succeed at hurting one player for each blitz, there isn't much you can do. Against them, undead will always try to bash. They can also keep their important players protected more easily. Agility teams are advantaged because they are generally faster and they can dodge out of zombie tackle zones easily. So each team should try to make the most of their assets against them. The thing is that Undead are a tier1 team for a reason, and they don't have any big weaknesses, and are a versatile bash/control team. You should absolutely try to hurt ghouls, but it's not that effective, and certainly not as effective as targeting skinks in the lizardmen team, for example.
